How to Prepare Beetroot

This herb can be boiled, sautéed, pickled, fried, juiced, steamed, pureed, grilled, or baked. The preparation depends on your style and taste. Beetroot Chutney

Ingredients:

A kilo of beetroots     

4 green apples                

2 teaspoons of grated ginger    

2 teaspoons of chopped garlic

2 onions       

2 cups of sugar

2 cups of wine vinegar     

2 teaspoons of cinnamon

2 teaspoons of ground cardamom    

1 teaspoon of cumin

1 teaspoon of ground cloves    

1 fresh lemon (juiced)

Procedure:

1. Boil the beetroot until it gets tender
2. When it is cooked, let cool, peel and dice
3. Then dice the apples and onion
4. In a sauce pan, bring to a boil the diced apples and onions
5. Put along the vinegar, garlic, sugar, lemon juice and spices
6. Add the diced beets to the mixture
7. Boil for another 10 minutes before letting simmer for 30 more minutes
8. Turn off the heat when the mixture thickens and let cool
9. Pour the mixture in sterilized jars and tightly seal

Beetroot Juice

Ingredients:

• 1 teaspoon of beetroot powder/chopped beetroot
• 1 fresh carrot
• 1 small stalk of celery

Procedure:

1. Wash the vegetables using water and a stiff vegetable brush
2. Remove the carrot and beetroot tops, and peel the beetroot if its skin is tough
3. Slice up the vegetables to fit your mixer/blender
4. Juice and serve
